This sauce was developed in honor of my home town, Evansville Indiana. The city of stop lights. For example a new "expressway" is 14 miles long through the city and has 16 stoplights.
Ingredients.
equal amounts of yellow squash, zuchinni and chopped tomatoes. Probably about 2 cups of each.
olive oil
hot water from the pasta.
Any pasta will work but I prefer with corkscrew or spaghetti. Eight oz dry will be enough.
Start your pasta water early as you can use the hot water in the sauce.
In a large skillet heat a couple Tbs of olive oil to shimmer.
Add all the veggies, some salt and a pinch or two of red pepper flakes if you want.
Cover and cook until all is very tender adding some of the hot pasta water as needed if it gets too dry.
When almost done start cooking the pasta.
When the pasta is done fish it out of the water into the sauce.
Mix well adding the pasta water as needed if too dry.
We don't use sprinkle cheese with this but you could if you want.
