I found this simple recipe on line, thought I would share it with you for the season

Ingredients:

1 can (400 ml) of Black-eyed Peas
1 can (400 ml) of Mexican Flavoured stewed tomatoes

Directions:

Drain the black-eyed peas. Put in a saucepan. Drain the tomato juice into the saucepan,
and then cut up the tomatoes to be smaller sized. Add the tomatoes to the saucepan.
Mix together. Turn the heat on to medium and simmer for 25-30 minutes.

You can eat it plain, or serve over cooked rice; you may make vegan cornbread muffins etc.
and serve a salad on the side

Serves: 4.

Preparation time: 25-30 minutes.

This not only sounds really good, but is something even I can make (I'm a failure as a cook). I've seen Italian cut tomatoes but haven't seen Mexican ones...but then of course I haven't looked. I sure will now, and can't wait to try it. Thanks for the recipe.

Denise, tomatoes with green chilis will do the trick if you can't find Mexican flavor tomatoes. You can always add a little chili powder.

One more thing. Drain those tomatoes first but save the liquid. That way you can adjust the heat better because they are hot.

Okay, I really want to try this out. It was surprisingly easy to find the mexican stewed tomatoes, but I can't find black eyed peas anywhere! I bought a can of pinto beans...are they similar or is there a different bean which is closer to black eyed peas? I saw kidney beans, garbanzo beans, white beans and black beans and probably some other kinds of beans. Quite confusing!

All beans will have a dectable taste difference from each other. I've often changed types in different dishes and never had problems with the finish. You should be able to find dry black eyed peas. Being small they don't need a presoak and will cook in a couple hours. Use the crockpot if you want to cook dry black eyed peas. The pinto beans will not be a problem and are just a larger bean.

I agree you should try the dried black-eyed peas.
It would take a little more effort; each bean has its own distinct taste

This is getting interesting. It sounds like I'll be going with the black eyed peas. I've never had them before, and also have never cooked anything but canned beans...so this will be a double adventure!

I couldn't wait, and it's snowing here, so I went ahead and made it with the pinto beans and ate it for lunch. IT IS FANTASTIC!!!

I do think that the smaller black eyed peas would work out better if only for their smaller size. I'm interested also in their flavor, but I bet it's more of a fit than the pinto beans.

It's more like a thick soup or stew. I ate half of it and left the other half for Bob. He loves it too!!!

Finally, a recipe that even I can cook. I'm hoping to find canned black eyed peas at another grocery store...I'm betting Whole Foods will have them.

We're having the kids over for enchiladas (which of course Bob will make) and I will fix these beans as a side.

I looked in different stores and finally found canned black eyed peas! I am too chicken to try to cook the dry ones.

We had it tonight along with a salad for dinner and if was much better than with the pinto beans. I like the flavor, size and texture of the black eyed peas and they go perfectly with the cut mexican tomatoes. You guys were right about beans being so different.

Seattle is pretty much snowed/iced in right now and has been since Tuesday. It's hopefully going to warm up tomorrow, but then of course they're worried about flooding.

Anyway, this recipe is just what this weather calls for!

That's great Denise, be sure to stock up. I probably use pinto beans and black eyed peas the same amount just depends on the dish. Now that you have found canned black eyed peas, Hoppin' John is next.
